Westcombe Mature Cheddar Cheese, traditional raw milk farmhouse cheddar
Westcombe cheddar cheese is a traditional Farmhouse cheddar cheddar made with unpasteurised milk still warm from the cows, traditional rennet and starter cultures, even an old peg mill is used to mill down the curd slabs when the cheese is starting to set. Salt is added and the whole process of stacking and turning is all done by hand.
The young cheeses are eventually bound in cloth so they can breathe and mature for 12 to 18 months, or until they're deemed ready to go. The resulting cheese has a wonderful depth of flavour with a lovely lactic tang, that's tasty but not too sharp. With a bit of a citrus note, the flavour lasts amazingly on your palate.
