Ossau Iratty cheese is a very unusual ewe's milk cheese from the French Basque Country. Ossau Iratty is an uncooked sheep's milk cheese which is very pale and velvety smooth cheese with a sweet, nutty and buttery flavour. From Aquitaine, Ossau Iratty is said to be one of the first cheeses ever produced, it is matured for 80 to 120 days so relatively young for a hard cheese. . The curds are warmed and pressed, giving the cheese a lovely smooth texture, which is great for melting as well as munching on of course! Its pious origins (often made in by monks in the western Pyrenees) ensure the high quality of the entire cheesemaking process.
