Oak Smoked Little Hereford is a local cheese which is sent to be slowly cold-smoked in the local Black Mountains.  In addition to the little smoky tang it develops it is also creamier than the plain Little Hereford.  Made up the road from our Leominster shop in the Monkland Dairy by new cheesemaker Dean, who's doing a great job!   Little Hereford is made from a recipe written by Herefordshires chief dairy maid in the 19th Century, Ellen Yield .  One of our customers who is in her 90s remembers Ellen, who used to ride around on her bike selling cheese from the basket on the front, always wearing a huge hat with an enormous feather in and lovely full length dresses, not the image I had in my mind of a dairy maid!  The cheese itself is gentle, but has a nice lingering flavour, matured for 4 months it still has a freshness about it that mixes with the hard but slightly crumbly texture of the cheese, melting into a pleasant creamy mouthful as you get going.  Made with unpasteurised milk and traditional rennet.
