Kirkhams tasty lancashire cheese is moist, crumbly and rich with a savoury tang. A traditionally made British cheese, cloth bound, buttered and full of flavour. Theres a satisfying citrusy acidic tang to this cheese which has what the locals call a buttery crumble in texture. Mrs Ruth Kirkham began making Lancashire Cheese at Beesley Farm over 40 years ago, making her the third generation of cheese maker in her family. She now works with her husband John and her son Graham. Three days of curds are used when making lancashire which means that Graham can control the acidity to perfection (the younger curds being more acidic). Depending on the milk on the day, the acidity can vary a surprising amount. The type we sell is 'tasty Lancashire', that is aged longer than 'creamy Lancashire', typically over 5 months. The milk comes from their own herd.
A quarter Lancashire cut in a circle O makes a great base for a wedding cheese cake.
