French Gruyere cheese is made with the milk from cows that graze freely in the summer. In the winter the Gruyere de France cows are fed on fodder collected in the summer; with no silage permitted. The calves are raised with their mothers, and no antibiotics or growth hormones may be used so its a really animal friendly cheese. The colour of the cheeses pate varies with the time of year and the grasses upon which the cows feed. No extra substances may be added to the cheeses, and that includes natural food colouring. Gruyere is quite nutty, the French version having holes (the swiss doesn't!) the French is also a bit sweeter and milder than the swiss and a fair bit cheaper. Made with unpasteurised milk, try it in a croque Monsieur or it's a great base for a fondue!
