Gjetost cheese, known as Norwegian Fudge Cheese is a most unusual caramelised Norwegian cheese made with goat's milk and cow's cream. I thinks it tastes a bit like a caramac bar but with a slightly sour note. We have masses of people coming into the shop getting very excited about 'fudge cheese' when they see it.
From the feedback I get in the shop, a lot of people have it on toast, just slightly melted, sliced wafer thin or enjoyed open-faced on Norwegian flatbread served with fresh fruit or just eaten as a treat. Often enjoyed as a breakfast cheese in Norway, Gjetost also makes an excellent snack and is the perfect dessert cheese. It’s packed with energy and is extremely tolerant of temperature fluctuations. Because of these benefits, Gjetost is a preferred snack for Norwegians skiiers, who pack it in their backpacks and snack on it while on the trails!
