Cashel Blue cheese is a creamy, silky medium flavoured blue cheese. This wonderful Irish cheese is made by the Grubb family in County Tipperary. Cashel Blue cheese is pleasant, firm,creamy and tangy when younger. By 3 months of maturation it will have a richer, fuller and rounder flavour developing greater creaminess as it matures up to 6 months. Cashel Blue has a white paste when young turning increasingly towards a buttery yellow as it matures, really lovely and creamy.
This is a great cheese to have on a wedding stack, either keep it in it's gold foil, or cut it loose as in the picture with the bunting.
Cashel Blue cheese dimensions: Width 14cm x 9cm high. If you want a mini stack it works great cut in half across the circle.
