From the Lubborn Creamery near Cricket St Thomas in Somerset, this is a lovely goat's cheese which is nutty when young and salty, sweet and creamy when mature. The Lubborn Creamery, set in the fertile pastures of Somerset specialises in making a continental style of cheese. Capricorn like other goat's milk cheeses is characteristically very white in appearance. This is because the milk contains virtually no carotene.
