Caerphilly: Gorwydd Caerphilly Cheese
Gorwydd Caerphilly cheese is a really lovely traditional Welsh cheese, now made in Somerset which has a long history of Caerphilly makers. In some ways a cheese of two halves, the middle is fresh and crumbly with a lemony tang, the outer edge gains a smoothness as it ages and a mushroomy complexity. It is matured for 2 months and becomes softer and creamier with age. Gold Medal winner at the 2012 World Cheese Awards. For a milder cheese, I think Gorwydd (pronounced gor-with) has a great complexity of flavour and my little boy gets to eat the middle bit and I eat the edge; perfect!
With it's distinctive rind a Gorwydd Caerphilly makes a great base to a wedding sack. At 4kg for a whole it gives you a great amount of cheese to go round. We can also get a 2kg cheese as shown in the wedding stack picture.
