Brianna Wedding Cheese Cake, 6kg
Feeding 60 to 120, the Brianna cheese stack is a really lovely rustic cake, with some gorgeous unusual cheese and an amazing artisan look. Feeding up to 60 for an evening do or up to 120 for after dinner cheese, if you just wanted a small nibble or had other food too. Standing about 41 cm tall, it's a lovely looking and very tasty selection of cheese for your guests. As this cake was named to commemorate Brianna Ghey, we will be donating £10 of our profit from every sale to Mermaids, a charity that supports transgender children and their families.
The cheeses from the bottom to the top:
Shropshire Blue: A gorgeous tasty blue made by the Colston Basset Dairy. With the addition of anatto, the red colour of this cheese looks amazing on your cake. Shropshire is a lovely blue, creamy and melt in the mouth, mellow but full of flavour, it's nice and stable on the bottom of this stack. 21cm x 7cm 2.6kg
Buffalo Cheddar: If you haven't tried buffalo cheddar before, it's a real treat. Tasty and with a lovely cheddary texture, it's slightly more nutty in flavour than cows milk cheese, but there's nothing to it that will put off your guests and they're sure to be impressed with such an unusual option! 17cm x 11cm 2kg
Cornish Yarg: A lovely gentle hard cheese. Mild yet full of flavour, it's a great looker, covered by nettles. It gives this stack great height. Cow's milk, pasteurised, vegetarian. 13cm x 9cm. 1kg.
Finn: A mature, double cream cheese made up the road at Neal's Yard Creamery, Dorstone. It has a firm texture with a fresh creamy acidity. Weighing about 200g, they are 9cm wide by 4cm. Pasteurised, cow's
milk,vegetarian 9cm x 4cm. 200g.
Neuf Chatel: This lovely heart cheese is believed to date back to the 6th Century, so a few Centuries younger than St Valentine himself. Its a soft, slightly crumbly mould ripened soft cheese originating from the village of Neufchâtel-en-Bray in northern Normandy and is made with pasteurised cows milk and animal rennet. 200g
For a gathering we recommend 50 - 100g per person, depending if the cheese is to be eaten straight after the meal or later in the evening and with other food or by itself. (So the lower amount it shows as feeding is based on 50g and the higher is 100g) We can very happily advise over email so drop us a line on info@mousetrapcheese.co.uk for ideas for a bespoke cheese board for your wedding or event.
