Baron Bigod Brie is a really wonderful British soft cheese. Full of lovely flavour, like a British Brie de Meaux but (dare I say it) even nicer!! Mushroomy and silky soft, there's a gentle earthiness in this cheese, I know this is not what you'll be expecting to hear from a cheese monger but I LOVE it in a brie and grape sandwich! Superbly at home on any top quality cheeseboard, I will often pop this in with the more expensive British Cheese selections. It's not cheap but boy is it worth it..
Made by the fine folk from the Fen Farm Dairy in Suffolk with the upmost of care and respect in small batches. Raw Montbelearde cow's milk straight from the farm is used, delicately moved as to not to break the structure of the fats. Made with milk still warm from the cows, it's matured up to 8 weeks, when young it has a wonderful crumbly nature in the core, giving a lovely lactic flavour, developing into a fully soft brie, with a more mushroomy flavour.
