Feeding 40 to 80, the Annelise party cheese is a great stack for a small gathering, coming in at 4.4kg, it would feed up to 40 for an evening do or up to 80 for after dinner cheese if your just wanted a small nibble or had other food too. Standing about 35 cm tall, it's a lovely looking and very tasty selection of cheese for your guests, there is a vegetarian option available..
The cheeses from the bottom to the top:
Yorkshire Blue: A lovely mid strength blue. Makers Shepherds Purse advertise it as being mild but I think it has a bit more flavour than that really. Gorgeously creamy, with a lovely balance of flavour, I think this cheese suits a variety of tastes. This blue is made in Thirsk using Yorkshire cows milk which is pasteurised and uses vegetarian rennet. It is a handmade in a continental style which gives it a buttery-sweet flavour without a sharp bite. Softer blue cheeses are often made in foil to keep in the moisture and to stop a hard rind forming and the cheese drying out so it can be presented in a silver foil if that suits your colour scheme more. 18cm x 5.5cm 1.5kg
Inglewhite Black Wax Cheddar: A lovely tasty creamy cheddar from a farm up near Preston. Great for a gathering and a nice size for a small stack. 14.5cm x 7cm 1.25kg
Cornish Yarg: A lovely gentle hard cheese. Mild yet full of flavour, it's a great looker, covered by nettles. It gives this stack great height. Cow's milk, pasteurised, vegetarian. 13cm x 9cm. 1kg.
Finn: A mature, double cream cheese made up the road at Neal's Yard Creamery, Dorstone. It has a firm texture with a fresh creamy acidity. Weighing about 200g, they are 9cm wide by 4cm. Pasteurised, cow's
milk,vegetarian 9cm x 4cm. 200g.
Neuf Chatel: This lovely heart cheese is believed to date back to the 6th Century, so a few Centuries younger than St Valentine himself. Its a soft, slightly crumbly mould ripened soft cheese originating from the village of Neufchâtel-en-Bray in northern Normandy and is made with pasteurised cows milk and animal rennet. 200g
We can make Annelise a vegetarian selection by swapping the Neuf Chatel for a Godminster cheddar heart on top in burgundy wax.
For a gathering we recommend 50 - 100g per person, depending if the cheese is to be eaten straight after the meal or later in the evening and with other food or by itself.
