Waterloo cheese is a wonderful vegetarian, mild cheese that matures with a rich buttery brie flavour. The curds in this cheese are washed, which reduces the acidity making it a nice mellow creamy offering. You can taste the sweetness of the milk and the lovely spring grass coming through.
Waterloo cheese is a British brie type cheese made in Berkshire by Anne and Andy Wigmore from the raw milk of Guernsey cows grazing on a nearby farm. This cheese is a favourite on wedding stacks as its size is great for having nearish to the top so you don't have the squashing problems of a larger brie style cheese further down the stack. Matured for 4 to 10 weeks, waterloo is made from unpasteurised milk.
